It’s only Tuesday, and this week has already been full of new recipes, which will all hopefully be blogged soon! I had half of the day off yesterday, so I spent about 5 hours in the kitchen (which, in our studio apartment, is also technically the living room, dining room, and bedroom). After a weekend at home, where every meal we ate was spectacular, thanks to Mark’s Feed Store and Zoes Kitchen, we’re back to the land of eating in, rather than dining out.
And since we’re trying to dine a bit less expensively this month, we’re doing things simply, mostly with ingredients we already have, like chicken, shredded cheese, and rice.
I’ve recently become aware of the wonders of stuffed bell peppers. Besides being super tasty, bell peppers are full of vitamins and nutrients that protect against cancer and heart disease. Apparently they also reduce the risk of blood clots, heart attacks, and strokes, and they can lower your cholesterol. Crazy. I’m super glad I made them for dinner last night (and ate the leftovers for lunch today). I’m feeling pretty darn healthy.
Just a heads up- you’ll need a slow cooker for this recipe.
Stuffed Bell Peppers
2 large bell peppers
1/2 cup brown rice, cooked
1/2 breast chicken, cooked and cut into small pieces
1/3 can black beans, drained
2 green onions, chopped
hand full of shredded cheese
3/4 cup vegetable broth
salsa
Cook rice as instructed on package. Cook chicken.
Meanwhile, cut the tops off the bell peppers and remove seeds, so that peppers are hollow.
In a bowl, combine cooked rice, chicken, beans, and onions. Mix well and spoon into bell peppers. Top with shredded cheese.
Pour vegetable broth into slow cooker. Stand filled peppers up inside slow cooker. Cook on HIGH for 3 hours. Top with salsa and serve.
I pretty much ended up cutting up my pepper to eat it, so it looked more like this. Appetizing, right? Be warned that the peppers will be super tender, so they fall over really easily on a plate. If you’re a messy eater, like me, I’d recommend eating them inside a bowl.

Love stuffed peppers! When the yummier peppers (red, orange, yellow) get cheaper (SUMMER!) stuffed peppers will be on our table too!
