This is my first post as a college graduate.
Okay, so I haven’t technically graduated yet (that happens on Sunday), but I am finished with college. No more climbing the four flights of stairs to my 8 a.m. class. No more risking my life to cross Cooper Drive because the pedway is under construction. No more writing papers about things that don’t matter. No more reading guides. No more perfect weather days spent in a freezing cold classroom.
And because my days will no longer be filled with homework and studying, I’ll be spending my time trying to decide what to do with my degree. Any suggestions would be greatly appreciated.
Other than trying to discover my life ambition, I’m also going to be cooking and baking up a storm. I’m so excited to peruse my new cookbooks and finally test out all of those recipes I’ve been saving from magazines over the past few months (or years).
For now, I’ll simply share the photos of the awesome food we enjoyed yesterday (and again today) in celebration of my completion of college. Because I’m finished with college. Finished. Done.
First up, homemade salsa. I read several recipes for salsa in an issue of Southern Living, and then just blended them together and added a few things. The measurements are all estimations, as I was just throwing stuff together.
Black Bean and Corn Salsa
1/2 cup frozen whole kernel corn, thawed
1 tomato, diced
1/4 can black beans, rinsed and drained
1/2 red onion, diced
2 cloves garlic, minced
2 tablespoons lime juice
2 jalapeño peppers, seeded and diced
hand full of cilantro, chopped
Stir all the ingredients together and enjoy with some yummy tortilla chips! Our current favorites are Tostitos Artisan Blend Black Bean or Fire-Roasted Chipotle. Oh my goodness, good.
We also enjoyed some homemade strawberry ice cream made with the strawberries we bought at the farmer’s market on Saturday. We also added in some Oreos (thanks, Mom, for the Oreos in our Easter baskets!) to make it strawberries and cream ice cream! For those of you who are getting married in the near future, please register for an ice cream maker. It is one of our favorite wedding gifts. And now that warm weather is coming, we can use it more often!
