I figured it was about time to share a recipe for a weekly staple in the Ringer household. Fajitas. Steak fajita bowls, to be exact. Eric told me recently that this is his new favorite meal, which is great because it’s super easy and is a great way to get some veggies into our bellies.
So without further ado, here’s our recipe for fajitas. I’m not including much in the way of measurements because you can add more or less meat, peppers, and rice, depending on how many people you are feeding.
strip steak, cut into thin slices (You can buy this pre-cut at Kroger for pretty cheap, usually $3-5. It’s labeled as ‘stir-fry steak’, and works perfectly for this recipe.)
packet of fajita seasoning
2 tablespoons EVOO, divided
bell peppers, cut into thin slices (I usually use 2 or 3, but I went bell pepper wild this week and used 4. You can use any color you like, but I’m partial to red and orange, I believe.)
1/2 red onion, sliced into thin circles
1 tablespoon lime juice
shredded cheese (optional)
At least 30 minutes before you begin cooking, pour half of the fajita seasoning packet onto the steak and let it sit in the fridge (I usually do this the night before or the morning of, depending on time. It can sit in the fridge for up to 48 hours, from my experience).
Cook rice according to package instructions.
Meanwhile, chop your peppers and onions. Heat 1 tablespoon EVOO in a large skillet over medium heat. Add peppers and onion. Cover with the remainder of the fajita seasoning. Cook, stirring occasionally, until veggies are tender.
Remove the veggies from the skillet (I just pour them into a bowl). Add 1 tablespoon EVOO to skillet, along with the meat. Cook until the steak meets your desired cooking level. Turn off the burner. Add the veggies to the skillet with the meat. Stir in lime juice.
Once the rice has finished cooking, remove from heat and stir in chopped cilantro.
To eat, fill bowls with rice, meat and veggies, and top with salsa or cheese. (The salsa recipe I posted last week works great with this meal!)
