I apologize for the lack of posts. Even though I’m finished with school, the rest of life has gotten increasingly busy. But we have eaten a ton of awesome meals this week, most of which we will be eating again next week so that I can photograph and blog about them! And hopefully the sun will start shining into our apartment so that the photos can be significantly happier and make it appear that we don’t always eat in the dark.
Anywho, the Lexington Farmer’s Market started up again last month, and we’ve been thrilled to visit each weekend to pick up some delicious fresh produce. I’m so excited that it’s finally strawberry season, as I could probably eat strawberries every day for the rest of my life and never grow tired of them. And since we’ve had an overflow of strawberries lately, we’ve been eating them in this delicious dessert that you must try. I saw this in a Food Network magazine a few months ago and have been dying to try it. And I think we’ve eaten it every night this week (since we ran out of homemade strawberry ice cream). We’ve been making them in juice glasses, which seems to be the perfect size for this treat.
Strawberry Parfait
graham crackers (1 full piece for each parfait)
strawberries, cut into small pieces
greek yogurt (I used vanilla or honey flavors)
honey
cinnamon
Crumble a graham cracker into the bottom of each glass.
Top with strawberry pieces.
Add a few spoon fulls of greek yogurt.
Drizzle some honey onto the yogurt.
Sprinkle with cinnamon.
And there you have it. Super easy. Super delicious. And a perfect, light, summer treat. Enjoy!
