Bears. Beets. Battlestar Galactica.
We picked up some beets in our CSA basket last week, and I had no idea what to do with them. In my mind, beets are some disgusting vegetable similar to a potato. I don’t know why I thought this, but aside from my Dwight Schrute quote repertoire, I’ve never had any experience with beets. A quick search of the Food Network’s recipe collection brought a recipe for roasted beets with feta. I had no idea that beets were so delicious and sweet. You have to try this.
Roasted Beets with Feta
recipe from the Food Network
4 medium beets (our beets were small, so I used 6)
1 tablespoon EVOO
salt and pepper, to taste
4 green onions, chopped
2 teaspoons lemon juice
crumbled feta cheese
Preheat the oven to 450 degrees. Peel and chop beets into 1/2-inch pieces.
Toss with EVOO, salt, and pepper and place in a single layer on a baking sheet.
Roast, stirring once, until tender (about 30 minutes).
Meanwhile, chop the green onions.
Toss roasted beets, green onions, lemon juice, and feta cheese in a bowl. Enjoy!
