As you know, we get a lot of veggies from our CSA every two weeks. The most recent basket gave us sweet corn, carrots, and green bell peppers. So we made a meal out of it!
I sliced up some carrots, grape tomatoes, and green bell peppers. Then I stirred them in with some EVOO and sprinkled them with Tony Chachere’s Creole Seasoning (thanks, Becca Campbell!). I roasted them in the oven at 400 degrees for a few minutes until they smelled delicious. Done.
As for the corn, the June issue of Country Living was full of ideas for grilling corn. We decided the maple-mustard with bacon variety sounded delicious (and it was a bonus that we already had the ingredients!). I’m not sure if this tasted good simply because grilled corn is good, or because bacon makes everything delicious. I’m going to give the credit to the bacon. But you can try it for yourself.
Maple-Mustard Corn with Bacon

2 ears of sweet corn
EVOO
1/8 cup maple syrup
1 tablespoon Dijon mustard
1/4 teaspoon allspice
4 slices turkey bacon
Begin by husking the corn. Then brush with EVOO. Grill on medium-high (on the grill or the grill pan) until tender, about 20 minutes.
Meanwhile, cook the bacon until crisp. Drain on paper towels. Crumble the bacon and set aside on a plate.
Combine syrup, mustard, and allspice in a bowl. During the last 3 minutes of grilling, baste corn with the maple-mustard glaze. Roll the corn in the bacon bits. Serve immediately.
In other news, two of my best friends from home, Madri and Carly, came to Lexington last week! I haven’t seen them since Christmas break, so we were pumped to see one another. We went out to dinner at Alfalfa’s, one of my favorite local restaurants (and within walking distance of our apartment!), where we enjoyed some good locally grown food. If you haven’t been there before, go for dinner and order the Alfa burger. As a person who doesn’t generally like burgers, I can say that Alfalfa’s makes an incredibly delicious burger topped with lots of veggies. And of course, no night out is complete without Orange Leaf, so we filled up on frozen yogurt too. Thanks for coming to visit, ladies!
