I can’t believe we’re already on the fifth week of our CSA! I’m afraid that September 21 (the last day of our CSA pick-up) is going to come too soon!
This week’s basket was probably the best we’ve gotten so far. I’m super excited that it’s bell pepper season, as bell peppers are one of the greatest vegetables on the planet, in my opinion. Just the thought of them makes me crave fajitas. I probably shouldn’t blog about the CSA when I’m hungry…
Without further ado, here’s the basket selections for the week:
-summer squash
-carrots
-beets
-sweet corn
-romaine lettuce
-green bell pepper
-basil
-flowers (Eric traded a head of lettuce for some flowers to bring some summer sunshine into our apartment. What a great husband!)
As far as recipes go, we’re open to suggestions, as always! We used last week’s summer squash in our vegetable lasagna. I think this week’s bunch might end up on the grill (or a grill pan, in our case, as we are grill-less). This might be a better way to help us distinguish between the different squash flavors. But, the zucchini could end up in another batch of zucchini bread. I made some with a huge zucchini from the farmer’s market, and it provided breakfast for a week! I may try it again and mess with the recipe a bit.
Last week’s carrots are still in the fridge. We ran out of hummus, and I’m not real big on eating plain carrots. Maybe some carrot cupcakes are in our future. Or muffins. Maybe a carrot cake/muffin hybrid.
We ended up liking this recipe for roasted beets with feta so much that we didn’t bother trying any other beet recipes last week. Could it be time for beet, apple, and cheese pizzettes?
I’ve never been a big fan of corn, but Southern Living did a whole spread of grilled corn recipes that got me kind of excited. I’ll let you know how that goes!
We got tons of basil, so we’re going to make pesto! Unfortunately, we don’t have a food processor. I’ve been doing a little research online to find an affordable one, but I’m just not sure what qualifies as a good food processor. If you have a food processor that you love (or hate), we’d appreciate your reviews!

We love grilled corn too, I shuck it, drizzle olive oil and sprinkle a seasoned salt on it, roll it up in a sheet of foil and put it on the grill. Turn it frequently so it doesn’t burn. Green peppers are good stuffed. I also have a good recipe for fried corn if you’re interested .

In love with our food processor. It has chopping discs that let you slice carrots, cucumbers, celery…and probably beets! Also a shredding disc for cheese. I love it. It’s my child.
