I cannot believe July is almost over. The impending end of summer is sad, but at least there’s no dreading the first day of school this year! Still, this summer hasn’t really felt like summer. I mean, it feels like summer, since it’s about 95 degrees every day, but these past few months haven’t been filled with my usual summer activities: swimming, sleeping, reading, vacationing. I guess I’ve been spoiled with wonderfully exciting summers my entire life. This summer has consisted of working, traveling back and forth to Oldham County to help our families with moving preparations, and trying to organize our apartment. I suppose I’ve gotten in my fair share of reading, but it has mostly been indoor reading (under a blanket, because our apartment is freezing). Luckily, we have a trip to the lake with the Ringer clan in our near future. Perhaps that will solidify summer for me.
Anywho, summer has brought a bounty of fresh food from our CSA. Poor Eric had to pick up our basket on his bike this week because I was at work with one car, and the other was getting repaired. I would like to remind everyone that it is always 95 degrees outside. He had a sweaty ride. Anywho, here’s what we got in our basket this week:
-green bell peppers
I’m at a bit of a loss as to how to use all of this. I don’t think I’ve ever eaten green beans (I know, I know. I was a very picky child.), purple cabbage, or radicchio. This recipe for grilled radicchio salad sounds appetizing though, so perhaps we’ll give that a try. As always, suggestions are appreciated.
