I have failed in the photo department this week. It was pouring down rain on the day we picked up our 9th CSA basket, so I never got around to taking photos. I hope you’ll forgive me. I know how much you all loved looking at that basket of food every week…
Here’s the bounty of our basket:
-sweet peppers: apple, romanian, nardello, red bell
-green bell pepper
-green chiles
-small slicing tomatoes
-romaine lettuce
-edamame
-arugula
-jalapeno pepper
We chopped up a lot of veggies and threw them on a veggie pizza (arugula, while not terribly lovable on its own, is quite delicious on a pizza). The romaine lettuce made a lovely salad topped with some slicing tomatoes and some crazy chipotle cheddar tortilla strips.
I’ve been slicing the sweet peppers and taking them in my lunch, along with a bit of hummus for dipping. It’s quite delicious.
Our favorite way to eat edamame is to boil it and then sprinkle with salt and pepper. I think we’ll continue to do this for this batch.
I’m not really sure what to do with the rest of our peppers. I feel as though they are multiplying and will soon take over the crisper drawer of the refrigerator. Suggestions?
Oh, and for those of you wondering about the potatoes from our last CSA basket, we ate a few of them last night. I sliced them up, brushed them with BBQ sauce, and sprinkled them with salt and pepper before roasting them in the oven. It was quite tasty, if I may say so myself. I’m looking forward to trying your serving suggestions!
