We have another success story from the kitchen! Although these 12 days of cookies started off a little rocky, Sandra Lee really brought it home with these Macadamia-Coconut Cookies. And the best part? Sandra Lee is the queen of semi-homemade, which means there is very little work involved in these cookies. Just a packaged sugar cookie mix (I will shamefully admit I believe these make the best cookies anyway), some butter, an egg, macadamia nuts, and shredded coconut. Really, you don’t even have to measure things. Just throw it all in a bowl and stir. I mixed this all together and popped these cookies in the oven before Eric even noticed I had gotten up from the couch. That’s how quick this happens, folks.
And I am proud to say that I successfully melted white chocolate to drizzle on top of these cookies. This usually ends in disaster for me (i.e. a big clump of sticky chocolate), but I managed to make a perfectly melted white chocolate sauce. I have no idea why it worked this time, but my faith in my kitchen skills has been restored. Thank you, Sandra Lee.
Sandra Lee’s Macadamia-Coconut Cookies
recipe from Food Network
17.5 oz sugar cookie mix
1 egg
1 stick butter, melted
3/4 cup flaked sweetened coconut
1/2 cup chopped macadamia nuts
1/2 cup white chocolate chips, for drizzle
Preheat oven to 375 degrees.
In a large mixing bowl, combine all ingredients for cookies except the white chocolate chips. Stir until soft dough forms.
Drop cookie dough by tablespoonfuls onto ungreased cookie sheet. Bake for 15 to 16 minutes or until edges are light golden brown. Remove from oven and cool 1 minute.
Melt white chocolate chips in microwave in 30 second intervals, stirring each time, until smooth (or, if you are like me and don’t have a microwave, stir these in a sauce pan over low heat and pray they don’t burn or become a clump of grossness). Drizzle over cookies.
These cookies got rave reviews at small group, and I even got a request for the recipe. I think that’s a sure sign of success, folks.
