How much do I love pizza?
When I was a very picky child, pizza was one of the only foods I would eat without complaint (along with hot dogs and bologna…I’ve come a long way, folks). Since my childhood of having pepperoni pizza for every single birthday sleepover, my pizza tastes have matured a bit. I don’t just eat pepperoni anymore. Most of the time, I like veggies on my pizza. In extreme cases, I will eat steak on my pizza. In fact, you should leave your computer right now and get yourself an Argentinean steak pizza from Saul Good. It is one of my favorite pizzas of all time.
Anywho, let’s get back to the veggies. I like to load my pizza up with veggies. Eric is not generally a huge fan of this idea, but somehow, we were both in the perfect veggie pizza making mood this week. In hopes of recreating something similar to the best brick oven pizza we’ve ever tasted, I tried my hand at making my own pizza crust and sauce. I wouldn’t say this was extremely successful. So I’ll toss those recipes aside and try again next time. But the toppings for our pizza rocked, so I’ll tell you about those. Here are the makings of an awesome veggie pizza:
-roasted butternut squash (conveniently left over from the previous night’s butternut squash pasta)
-red bell peppers
-spinach
-grilled red onions
-grilled zucchini
-grilled squash
-fresh basil
-fresh mozzarella (yes, the expensive kind in the little balls)
Put it all together, and you have an awesomely delicious pizza that you can feel pretty good about eating. Especially if you make that pizza a thin crust, light on the cheese (which is good for those of us with a bit of lactose intolerance…).

I haven’t! But perhaps we’ll try that next time. Kale is one of those veggies that I can only handle in certain situations, so we’ll see how it goes!
