First of all, I want you to know that I’m typing this post on an iPad. Just typing that sentence broke the record for the most words I’ve ever typed on this thing. Call me old school, but I really enjoy the click of the keys on my laptop. You can also call me old school because I don’t have a smartphone. Luckily, I have a smart husband who will answer his phone when his wife calls him at work, wondering how to get to the elementary school she’s supposed to visit in ten minutes. He’s pretty stellar, folks.
And that’s why I cook for him. Good husbands deserve good eats, yes? Yes. Really, we all deserve good eats. And good eats don’t have to be complicated. In fact, this fancy quesadilla can be whipped up and consumed in less than 10 minutes.
Quesadillas are the bomb. You throw a bunch of stuff in a tortilla and let it rock. It’s that easy.
Spinach Quesadilla
1 tortilla
1/4 teaspoon garlic powder
shredded mozzarella cheese
1/8 cup black beans
handful of spinach
1 teaspoon cilantro
1/4 cup salsa
Heat a skillet over medium heat.
Put your tortilla on a plate and sprinkle half with garlic powder (you will only cover half of the tortilla with all your toppings). Add a layer of cheese, followed by black beans, spinach, cilantro, and salsa. Top with more cheese.
Fold the tortilla in half and place in the skillet. Cook until cheese begins to melt; then flip to brown other side.
Simple. Delicious. Good eats.
