I’m pretty sure my body is about 50% peanut butter, 30% coffee, and 20% apples.
As I mentioned in my first day of cookie madness, when I was selecting recipes for 6 different cookies, I found myself pinning every recipe involving peanut butter. Since moving to Oregon, I think I’ve eaten more peanut butter than I have in my entire life. I’m not one of those crazies who eats it straight from the jar, but I like it stirred into some nutella for a snack with apple slices. And I like it in my cookies.
Today’s cookie comes from Gwyneth Paltrow’s cookbook, “My Father’s Daughter,” which I will unashamedly admit I bought as soon as it was in print. Gwyneth Paltrow is cool, and judging by her cookbook, she eats a lot of really awesome food. Some of it is a bit too fancy for two people living like college students (duck cassoulet, anyone?), but everything we’ve tried from this book has been awesome, including these cookies.
Grandad Danner’s Favorite Peanut Butter Cookies
from Gwyneth Paltrow’s “My Father’s Daughter”
1 1/4 cups unbleached all-purpose flour (I used half whole-wheat)
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
8 tablespoons (1 stick) unsalted butter, at room temperature
3/4 cup smooth peanut butter, at room temperature
1/2 cup firmly packed dark brown sugar
1/2 cup firmly packed light brown sugar
1 organic egg, at room temperature
1 teaspoon vanilla extract
1 cup peanut butter chips
Preheat oven to 350 degrees.
Whisk together the dry ingredients in a medium bowl. In a large bowl, cream together the butter, peanut butter, and brown sugars. Stir in the egg and vanilla. Add the flour in thirds and stir until smooth. Fold in the peanut butter chips. Roll the mixture into golf ball-sized balls. Press each cookie down with the tines of a fork.
Bake for 10 minutes.
I went a little wild and dipped these cookies in melted semi-sweet chocolate. Definitely a good idea. I think these are the best peanut butter cookies I’ve ever eaten. Thanks, Gwyneth. You da best. And I apologize that it always takes me at least 3 attempts to spell your name correctly.
