Bad news.
The peaches we bought during our fruit binge yesterday (which were not yet ripe when I put them on the counter yesterday afternoon), completely rotted and molded overnight. Before we got to eat any of them. Total bummer.
We pulled ourselves together and made some fruit pizzas with some of our zillion berries, which are holding on strong in the fridge. Fruit pizza is kind of a summer staple in the Ringer homestead. Mostly because it’s one of the most delicious desserts on the planet.
We may have eaten fruit pizza for dinner tonight. Mostly because I was still stuffed from our brunch at the Original Pancake House, where I accidentally ate this whole thing (minus the few bites I shared with Eric and Nathaniel).
In case you are really confused about what this monstrosity could be, it’s a peach pancake with some crazy cinnamon sugar glaze and peaches on top. It was delicious. And it was the size of my plate. And totally worth the 40-minute wait (apparently these specialty pancakes take a while to bake). But I definitely regretted eating this whole thing as the poor buttons on my dress rebelled against the excess food in my stomach. Eric says I suffer from PER (post-eater’s remorse). It’s the truth.
Anywho, back to the fruit pizza, which I will never regret eating. It’s super easy to make, and it’s perfect for serving to groups. You could make your own sugar cookies from scratch, but we use store-bought sugar cookie dough because Eric is in love with it and fears that making our own cookies would ruin the fruit pizzas. We used to just roll out the dough and bake it like a giant cookie, which we would then cover in frosting and fruit. But when we made it this way, we felt like we had to eat the whole thing at once so that the fruit wouldn’t go bad. Now we bake individual cookies so that we can decorate them one at a time (and control our cookie intake).
But these things are topped in fruit, so it’s practically a health food.
- 1 roll sugar cookie dough
- 1 package (1/3 reduced fat) cream cheese, at room temperature
- ½ cup sugar
- fruit of choice
- Bake the cookie dough as instructed on the package. Allow the cookies to cool completely.
- Mix together the cream cheese and sugar until smooth. Refrigerate until ready to use.
- Spread the cream cheese mixture on the cookies and top with fruit.
Pat yourself on the back for eating something super healthy. Fruit cancels out cookies, right? Right.
