Okay, so today’s cookies were awesome.
And probably not good for those of us who lack self-control when it comes to chocolate and peanut butter.
It’s been about 24 hours since I made these, and I’ve consumed at least 10. Part of that was stress eating. You see, we’ve been watching Chuck on Netflix. I realize we’re years behind on this one (I think we prefer to be late to the TV show bandwagon so that we can binge watch with no fear of cliffhangers), and we watched a pretty intense season 3 episode last night. And it led to a need for cookies to soothe our worried souls.
Anywho, these peanut butter buckeye pretzels are fantastic. The original recipe used waffle pretzels, but despite the fact that our grocery store had 20 varieties of pretzels, none of them were waffle style. So I grabbed the classics and it worked out just fine. The original recipe also fully dunked the pretzels in a chocolate coating, but we all know that I’m incapable of properly covering anything in chocolate, so I just dipped a little more than half of each pretzel sandwich. This way, I could just hold on to a bit of the pretzel without fear of wasting all my chocolate in a big mess.
- 1 cup creamy peanut butter
- 2 tablespoons unsalted butter, softened
- dash of salt
- ½ teaspoon vanilla
- 1¼ cups powdered sugar
- pretzels
- chocolate candiquik (I used 2 7-oz containers of Baker's dipping chocolate)
- Line a baking sheet (or large surface) with wax paper.
- Beat the peanut butter, butter, salt, and vanilla together until creamy. Beat in the powdered sugar until well combined.
- Roll into small balls and press between 2 pretzels (a sandwich, if you will).
- Melt the chocolate and dip each pretzel sandwich into the chocolate. Place the completed sandwiches on the wax paper and let set. I put mine in the fridge for about 15 minutes to speed up the process. Store in the refrigerator to keep the chocolate nice and solid.

I made approximately 55 pretzel cookie sandwiches and pride myself in having eaten only a small portion.
