Veggie Tater Tots
 
 
Serves: 25-30
Ingredients
  • 1 cup cooked quinoa
  • ⅔ cup grated carrots
  • ½ cup finely chopped kale
  • 1 cup cooked, mashed sweet potato (about 1 medium potato)
  • 2 cloves garlic, minced
  • 1 egg
  • ¼ cup breadcrumbs
  • ¼ cup shredded cheese
  • salt and pepper
Instructions
  1. Preheat oven to 350 degrees. Line a baking sheet with parchment paper.
  2. In a large bowl, stir together the quinoa, carrots, kale, sweet potato, and garlic. Once combined, stir in the egg, breadcrumbs, shredded cheese, and a dash of salt and pepper. It should be a big, ugly mess. Stick your hands in there and form 1-inch (tater tot-shaped) pieces. Arrange on the baking sheet and bake for 30-35 minutes, turning halfway through.
