Peanut Butter Buckeye Pretzels
 
 
Serves: approximately 55 cookies
Ingredients
  • 1 cup creamy peanut butter
  • 2 tablespoons unsalted butter, softened
  • dash of salt
  • ½ teaspoon vanilla
  • 1¼ cups powdered sugar
  • pretzels
  • chocolate candiquik (I used 2 7-oz containers of Baker's dipping chocolate)
Instructions
  1. Line a baking sheet (or large surface) with wax paper.
  2. Beat the peanut butter, butter, salt, and vanilla together until creamy. Beat in the powdered sugar until well combined.
  3. Roll into small balls and press between 2 pretzels (a sandwich, if you will).
  4. Melt the chocolate and dip each pretzel sandwich into the chocolate. Place the completed sandwiches on the wax paper and let set. I put mine in the fridge for about 15 minutes to speed up the process. Store in the refrigerator to keep the chocolate nice and solid.
