Veggie Wraps
- whole wheat tortillas
- hummus
- bell peppers, sliced
- carrots, peeled and chopped into matchsticks
- baby spinach
- Spread hummus in the center of the tortilla from end to end.
- Top with spinach, bell peppers, and carrots.
- Fold up the sides and secure with a toothpick.
Three bell peppers, three or four carrots, and a few cups of spinach are enough to feed two of us lunch all week long.
