Veggie Wraps
 
 
Ingredients
  • whole wheat tortillas
  • hummus
  • bell peppers, sliced
  • carrots, peeled and chopped into matchsticks
  • baby spinach
Instructions
  1. Spread hummus in the center of the tortilla from end to end.
  2. Top with spinach, bell peppers, and carrots.
  3. Fold up the sides and secure with a toothpick.
Notes
Three bell peppers, three or four carrots, and a few cups of spinach are enough to feed two of us lunch all week long.
