Sweet Potato Buttermilk Pancakes
 
 
Serves 2-3.
Ingredients
  • 1¾ cups old fashioned oats
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • 1 cup buttermilk
  • 2 tablespoons plain non-fat Greek yogurt
  • 2 eggs
  • 1 cup cooked, mashed sweet potato
  • 2 tablespoons maple syrup
Instructions
  1. Use a food processor or blender to grind the oats into a fine flour.
  2. Combine the flour, baking powder, salt, cinnamon, and nutmeg in a bowl.
  3. In another bowl, stir together the buttermilk, yogurt, eggs, sweet potato, and maple syrup.
  4. Stir the wet ingredients into the dry until just combined.
  5. Spray and heat a skillet or pan over medium heat. Use a ¼ cup measuring cup to drop batter onto the skillet. Bake 4-5 minutes on each side, or until nicely browned.
  6. Serve with pure maple syrup.
