The Ultimate Peanut Butter Granola

Serves: around 8 cups
Ingredients
  • 4½ cups old-fashioned oats
  • ¾ cup plus 2 tablespoons whole wheat flour
  • 1½ teaspoons baking powder
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • ¾ cup creamy peanut butter
  • ⅔ cup pure maple syrup
  • ¼ cup canola oil
  • ¼ cup milk (I use skim)
  • 2 teaspoons vanilla extract
Instructions
  1. Preheat the oven to 275 degrees, and line a rimmed baking sheet with parchment paper.
  2. In a large bowl, stir together the oats, flour, baking powder, salt, and cinnamon.
  3. In a medium bowl, stir together the peanut butter, maple syrup, canola oil, milk, and vanilla.
  4. Stir the wet ingredients into the dry mixture until everything is wet. Spread mixture evenly on the baking sheet.
  5. Bake for 15 minutes. Stir and break up large clumps, and bake 15 minutes more.
  6. Let cool completely on the baking sheet before storing in an airtight container.
Notes
We use this granola in our breakfast every morning. Here's what it looks like for one bowl:
-8 oz nonfat Greek yogurt
-1 teaspoon chia seeds
-1/2 teaspoon honey
-3/4 cup peanut butter granola
-1/4 cup frozen wild blueberries
