Banana Orange Burst Muffins
- 2 cups whole wheat pastry flour
- 2 teaspoons baking soda
- 2 teaspoons baking powder
- 1 teaspoon cinnamon
- ¼ teaspoon nutmeg
- pinch of sea salt
- 2 large, overripe bananas, mashed
- ½ cup extra virgin olive oil
- ½ cup honey
- ⅔ cup orange juice
- 2 teaspoons vanilla
- 2 teaspoons grated orange zest
- ⅔ cup fresh or frozen blueberries
- Preheat the oven to 400 degrees, and prepare a muffin pan with baking spray or paper liners.
- In a large bowl, stir together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- In a medium bowl, stir together the mashed bananas, olive oil, honey, orange juice, vanilla, and orange zest.
- Stir the wet ingredients into the dry, and mix until well combined. Stir in the blueberries.
- Divide the batter evenly between 12 muffin cups. Bake for 15-18 minutes, or until a toothpick inserted into the middle of a muffin comes out clean.
