Banana Orange Burst Muffins

Ingredients
  • 2 cups whole wheat pastry flour
  • 2 teaspoons baking soda
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • pinch of sea salt
  • 2 large, overripe bananas, mashed
  • ½ cup extra virgin olive oil
  • ½ cup honey
  • ⅔ cup orange juice
  • 2 teaspoons vanilla
  • 2 teaspoons grated orange zest
  • ⅔ cup fresh or frozen blueberries
Instructions
  1. Preheat the oven to 400 degrees, and prepare a muffin pan with baking spray or paper liners.
  2. In a large bowl, stir together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  3. In a medium bowl, stir together the mashed bananas, olive oil, honey, orange juice, vanilla, and orange zest.
  4. Stir the wet ingredients into the dry, and mix until well combined. Stir in the blueberries.
  5. Divide the batter evenly between 12 muffin cups. Bake for 15-18 minutes, or until a toothpick inserted into the middle of a muffin comes out clean.
