Maple Shortbread
 
 
Serves: approximately 30, depending on size and shape of cookie cutters
Ingredients
  • ½ cup granulated sugar
  • 3 teaspoons pure maple syrup, divided
  • 1½ cups unsalted butter, at room temperature
  • ½ cup packed light brown sugar
  • 3½ cups all-purpose flour
  • ¾ teaspoon salt
  • ½ teaspoon cinnamon
Instructions
  1. In a small bowl, stir together the granulated sugar and 2 teaspoons of the maple syrup. You've just made lazy-girl's maple sugar.
  2. In the bowl of a stand mixer, cream together the butter, maple sugar, and light brown sugar. Mix in the flour, salt, cinnamon, and remaining 1 teaspoon of maple syrup. Mix until well-combined, scraping down the sides of the bowl as necessary. The dough will come together into a large ball.
  3. On a lightly floured piece of wax paper, shape the dough into a disk. Wrap it in the paper and refrigerate for 30 minutes.
  4. Preheat the oven to 350 degrees. Line a baking sheet with parchment paper or silpat liner. Roll out the dough on a lightly floured surface to ¼-inch thickness. Use cookie cutters to cut the dough into shapes, and place on the lined baking sheet. Baking times will vary depending on the size and shape of the cookies, but bake until lightly browned, 10-15 minutes. Let cool for 5 minutes on the baking sheet, and then move to a wire rack to cool completely.
