our european extravaganza.

In hopes of not actually forgetting this entire European excursion, I’m sharing the photos and highlights from our autumn trip to London, France, and Switzerland. Eric had to go to London and France for work (tough stuff, but somebody has to do it), so I tagged along and made a grand little vacation out of it.
London
This was our first visit to London, and pretty much everything we knew going in was from either Harry Potter or The Crown. So here’s Eric on that bridge from Harry Potter:
The weather was pretty “meh” while we were there, so the photos aren’t particularly gorgeous or anything, but I will say that I liked London a lot more than I expected. Not being a big city loving gal, I was surprised how much I enjoyed walking around the city.
And here’s me in front of Buckingham Palace (obviously heavily featured on The Crown):

I’m a magazine junkie. Wait. First I should say that I’m a reading junkie. I love to read. There’s not much time for recreational reading during the school year, so I generally spend the first week or so of winter and summer breaks reading a book a day. I think I read the final Harry…

Happy Sunday! I love, love, love Sundays. Eric and I generally have a Sunday routine: church, grocery shopping, lunch, run/homework/relax, small group. But Eric was out of town this weekend for the SEC tournament, so nothing was quite normal. First off, there was the whole time change. I decided that the best way to handle…
cinnamon acorn squash.

In our never-ending pursuit to eat in season, Eric and I have turned to squash, the quintessential winter vegetable. We’ve tried several varieties, but apparently we are just not squash people. I don’t know if it’s the texture or the unappetizing name (‘squash’ sounds a bit like something you’d find on the side of the…

Hello, spring break! And, of course, in Kentucky we’re also saying, ‘Hello, snow!’ That’s right, folks. It’s snowing. Not that this shouldn’t be expected. It snowed 8 1/2 inches on the first day of spring break during my freshman year. In case you don’t remember that, here’s a flashback photo to March 8, 2008. For…
samoa cupcakes.

It came to me in a vision. A cupcake dream, if you will. I’ve had Girl Scout cookies on the brain lately. I remember the good ol’ days when several of my friends were Girl Scouts, and I was surrounded by cookie order forms. Unfortunately, the times have changed and I don’t know anyone who…
national pancake day.
Today was absolutely beautiful (once we knocked out that whole below freezing thing around 10 a.m.), so Eric and I went on lovely 4-mile runs (separately, of course, as Eric’s legs are about a foot longer than mine, meaning I slow him down). I ran to the Arboretum today, and then traveled the 2-mile loop,…

It’s only Tuesday, and this week has already been full of new recipes, which will all hopefully be blogged soon! I had half of the day off yesterday, so I spent about 5 hours in the kitchen (which, in our studio apartment, is also technically the living room, dining room, and bedroom). After a weekend…
veggie scramble.
Happy scrambled morning! We don’t actually have very scrambled mornings around here, as we wake up freakishly early (5:30) and then leave the house at different times in the morning. Really, the only frantic mornings around here are Sundays (fitting for the day of rest), when Eric and I have to get ready for church…
a rough week, a good run, and a classic Ringer dinner.
Midterms are here. I think this is the first semester of my college career where all of my classes have actually had midterm exams. It’s terrible. I spent this entire week studying for today’s two tests (and baking cookies, of course), but the exams turned out to be quite bearable. Apparently I got myself all…
chewy chocolate cookies.
I spend a lot of time eating cookies. My friend Becca (with whom I share a baking blog) and I spent the weeks leading up to Christmas baking the 12 Days of Christmas Cookies (read about that grand experience at http://eatitupwithus.blogspot.com/). After that, I thought I wouldn’t make cookies again for a long, long time….
