Some days you just need a win.
Like today, when the super simple bread recipe didn’t rise (darn you, Pinterest, for getting my hopes up for some no knead, no effort bread). And when the fabric paint washed out of my art project when I put it in the washer (even though fabric paint is supposed to stick with the fabric). And when I literally had zero human interaction because Eric is at school and I don’t know anyone here yet. And when I attempted to watch something exciting on Netflix while I work on the apartment, but there’s a lack of anything worth watching.
These are the days when I need a win.
The win came in the form of a salad. I wish I could say I always love salad. But generally, salads are super boring and bland. I want something with flavor.
Back when we were driving across America (can you believe it has been more than 4 weeks?), we stopped in Fort Collins, Colorado and ate the most delicious salad in the entire world. Of course, I wrote down all of the ingredients and decided that I would make it myself. So that’s what I did tonight. But with a few modifications, since I’m the chef and I can do whatever I want.
This salad was so good that Eric asked for seconds. Of salad. What?
Copycat Azteca Salad
-shredded chicken (I recommend partaking in your grocery’s rotisserie chicken)
-1/2 teaspoon chili powder (more or less to taste)
-spring salad mix
-canned black beans, rinsed
-red bell pepper, chopped
-pico de gallo
-avocado, chopped
-chipotle dressing (we used Saucy Mama’s Santa Fe Creamy Chipotle Dressing)
Toss chicken with chili powder.
Fill a bowl (or some plates) with lettuce mixture. Top with chicken, black beans, bell pepper, pico de gallo, and avocado, using as much or as little of each ingredient as you please. Serve with chipotle dressing on the side.
Clearly, this recipe didn’t really need instructions, and I suppose that’s the joy of a salad. You can just throw it all together and it will be fine. And so scrummy (any New Girl fans out there?).
Now go enjoy an exciting salad. And celebrate the fact that it is Tuesday, which means we can watch New Girl and laugh and laugh and laugh.
