I’ll be honest with you here and say that I spent the majority of my life not enjoying watermelon. I know, right? What’s that all about? One magical day last summer, I ate an incredible cube of watermelon and my life has never been the same. It’s just so good. How on earth was I not eating this before?
A few weeks ago, one of my co-workers made this incredible watermelon salad for a little work fiesta. It had watermelon, feta cheese, and basil. Crazy combination. But so, so good. And something about adding herbs and cheese to fruit seems oh-so-gourmet. There’s really no measuring here, just add ingredients as you please.
Watermelon Salad
Ingredients
- 1 watermelon
- salt
- handful of feta cheese
- fresh basil
- juice of ½ a lime
Instructions
- Scoop out watermelon pieces using a melon-baller (if you're feeling fancy), or cut it up with a knife. Put watermelon pieces in a bowl. Sprinkle with salt.
- Roll up the fresh basil leaves and slice thinly (this will get you the fancy basil strings). Sprinkle the watermelon with basil, feta cheese, and the lime juice.
During the creation of this salad, I squirted everything within a 5-foot radius with watermelon juice. It happens. But it’s worth it.
