What did we learn today? Quinoa doesn’t photograph well.
For real. It looks gross. Particularly when combined with yogurt. But we’ll get to that later.
As you know, we’ve been eating berries like they are going out of style (or like they will start molding quickly, which is far more likely). We’ve been working them into every meal (and every wonderful dessert) for the past few days. In an effort to eat something semi-healthy, I threw together a little quinoa-berry dinner earlier this week.
We had some leftovers after dinner last night, so we decided to stir them in Greek yogurt for dinner tonight. It was an excellent decision. This would be a great, protein-packed breakfast (good for those of us who are starving again by 9:30 am). Yum, yum, yum.
Quinoa and Berries
2 cups cooked quinoa
dash of cinnamon (you just want a hint of it)
2 cups sliced fruit of choice (I’ve had success with peaches, mango, and any sort of berry)
1 tablespoon honey
1/2 teaspoon lemon juice
Stir ingredients together in the order listed above. It’s best served chilled. And even more delicious when stirred into some vanilla Greek yogurt.
By the way, I used red quinoa in my mixture (I believe it was on sale), but any quinoa will do. I’ve read that red quinoa has a nuttier flavor, but I’ll be honest with you and say I don’t taste a difference from regular old quinoa. Perhaps a side-by-side comparison is needed. If anyone does this research, let me know what you find.
In other news, we’ve become obsessed with Mad Men. I hate to be one of those bandwagon TV watchers, but let’s face it. That’s what I am. And Don Draper’s little posse has been a nice distraction from the stifling mugginess of our 80-something-degree apartment. (In case you were concerned, we’re currently pretty comfortable, as it only hit 90 today in Eugene.)
And, as promised, here’s a lackluster photograph of the fruit pretzel salad I made the other night. This salty pretzel crust, cream cheese/whipped cream filling, and fruit topping has served us well through many a Mad Men episode.
Oh, so delicious.
